Cheeseless Pizza

One of my favorite foods is Pizza. And nothing says Friday night better for us than Pizza & Beer.  However, more and more people are finding that they are not only Gluten intolerant, but dairy intolerant, as well. Geez!

Cashew Cheeze to the rescue! Now I can have my Pizza and Beer with a little less guilt. I start out with Udi’s Gluten-Free Pizza Crust and then whip up a batch of the Italian Pizza Cheeze (see recipe below), the only difference being that I add 3 Tablespoons of nutritional yeast to give it a cheesy flavor. Then add the toppings of my choice, pop it in the oven at 400 degrees and away we go. Yum!

Black Pepper Cheeze

2 cups cashews soaked for 1/2 hour and thoroughly drained
Juice of 2 lemons, about 4 Tbs.
3 cloves of garlic
1/2 tsp ground black pepper
1 tsp sea salt (I use half)
1/4 c water as needed

Process cashews, lemon juice, garlic, pepper, and salt until smooth, adding only enough water as needed to make a smooth creamy texture.

Italian Pizza Cheeze

2 cups cashew soaked and drained
Juice of 1 lemon  about 2 TBS
3 cloves garlic
1/2 c basil leaves
1 tsp sea salt (I use half))
2/3 c water as needed.

Blend all using as much water to make a smooth, creamy texture.

Now, since I mentioned Beer, I really must say a few words about this vaunted brew. Beer is like comfort food, especially when we are talking about some of the best of the micro-brews which have sprung up everywhere. I have several which I have fallen in love with that I thought I would mention here… Mind you, these are just a few of our most recent favorites.

Sam Adam’s ~ Double Bock – Delicious! Especially when watching a great 49er’s game

Marin Brewing Company ~ Star Brew Triple Wheat Ale – My hubby’s personal favorite

Lagunitas ~ Cappuccino Stout – Dark and Rich

Sierra Nevada/Dogfish Head ~ Life and Limb – Wow, what a brew!

Also, honorable mention ~ Abyss ~ A seasonal brew that comes out around Christmas time. We had the pleasure of drinking the last bottle available at Whole Food’s market on Blossom Hill and it was Divine! Wanted to run out and find a case. Damn! Have to wait 9 more months.

The beer guys at Whole Food’s have been wonderful. We love to pick their brains when they are in there. We have also had the pleasure of running in to other people who love beer as much as we do and they have shared notes on their favorite brews with us. So, expect more notes on this in the future.
